As most of you know, I encourage people to decrease their wheat and refined flour intake. But I still love a yummy grass-fed beef burger. So, instead of a bun, I use a large collard green (or 2) to wrap my burger in. It’s surprisingly tasty, and collards are packed with vitamins and nutrients. And collards are also a perfect wrap substitute cause they don’t tear easily!

If you find that raw collards are a little too hard on the stomach, try quickly steaming them before wrapping. Cabbage & large leaf lettuces are other good alternatives to the bun.

Ingredients:
organic collard greens, protruding stem removed (for easy wrapping)
grass-fed (or hormone-free) beef
optional toppings- sauteed onions, avocado, sprouts, lettuce, tomato, ketchup…
